When housebound last week due to the infernal heat happening outdoors, I came across avocado fries in my idle phone gazing and couldn’t help but want to try it. Avocados aren’t the most exciting things when warm and cooked, but these panko-crumbed baked fritters were surprisingly interesting. Yes, it did hold its shape like a crispy stick fry!

Simply:

Avocado slice –> coated with flour, beaten egg, then bread crumbs (I used Panko) –> drizzled with olive oil –> baked 180-deg-C for 15-20min or golden brown.
